Preheat oven to 450 degrees. Line a sheet tray with parchment paper and toss tomatillos, onion, jalapeƱos, and vegetable oil. Season with Salt and pepper.
Roast for about 20 minutes, until softened and slightly charred in spots. Allow to cool.
Blend roasted veggies, cilantro, and lime juice with olive oil until mostly smooth.
Serve with tortilla chips or as a salsa on grilled meat or tacos.
