This is an adaptation of the Pork Tenerelle recipe from the Silver Spoon cookbook. We love the recipes here as they are generally fairly simple and really highlight high-quality ingredients.
This quick sausage works well for ground pork or beef and is a nice staple to add to your meal rotation. Works well with dried herbs, but obviously fresh would be nicer.
This has been a favorite recipe of ours for a good 10 years … but we never realized until now that it would be PERFECT with ground pork! We’ve always made it with chicken or as a vegetarian dish but with the pork it has just now reached its full potential. This is a quick and easy weeknight meal – enjoy!
Meatballs take more time that we have right now. Instead of spending my entire evening cooking, I made the following recipe loosely based on the meatball recipe. We served this on top of plain cooked quinoa, but any grain you like to use would do fine. Rice, cous cous, pasta – use whatever you have in your pantry.
This recipe uses some shredded meat that we previously cooked in a crockpot and froze into meal sized portions. Having shredded frozen meat around really helped us continue to eat well during the busy times of life.
