TC Farm has got a bunch of new stuff coming your way for 2021!

Bring in the new! We've got a lot of exciting things coming in 2021. We're starting off the new year with a bunch of tasty treats to add to your January delivery. Plus there's still time to pre-register for our 2021 Veggie CSA (and get free weekly delivery in the process!) and we've got some news about a few new neighborhood pickup location additions too. Oh and did we mention we've got lamb? Kick back and read up!

Pastries!!

We've been wanting to offer organic pastries for a while now. We've partnered with Travis at Backwards Bread to offer three sweet treats for January.

Lots of people make amazing croissants and pastries but almost nobody uses organic ingredients. The ingredients are simply too expensive to use in such labor-intensive treats.

Well, if you're like us and want well-made food that is also organic: 2021 is your year!

If you've never had an expert pastry chef's croissants, you've really got to try them.

I know these may sell out quickly, but I promise: we'll make more soon. If you have any specific requests for other pastries, let us know.

Organic Chocolate

We've added two different selections of organic and fair trade chocolate.

Chocolate Chip
These are sometimes marketed as "dark", but at 45% cacao, I personally view them as semi-sweet. Perfect for our chocolate chip cookie recipe or just to eat with espresso. These will taste much better than those bags at the grocery and cost less than most organic options you might be lucky to find.


Dark Chocolate Bar
This is probably my favorite chocolate. It's well done with just three ingredients and 70% cacao. Unlike the chips, this does NOT have any emulsifier so it is soy free.

Bars are not the least expensive way to get chocolate but this is a much better chocolate than is found in the grocery for about the same cost.

If enough people ask us for a 70% chocolate chip, I'd love to offer those too. Pacha makes a chip version and they are great.

Organic and Fair Trade

Why is it so hard to buy organic and fair trade chocolate in the grocery?

New Organic Cheeses

Last month, we featured the amazing Alemar cheeses. We had several requests for a cheddar and goat cheese.

We were able to add in the option of my favorite everyday cheddar later in the month. Some of you saw that in the portal and added it to your December delivery at the last minute (nice!). We had to wait until January to add the organic goat cheese option.

This is a great go-to daily cheese from small WI farms you can trust.


Note:This cheese is organic and non-GM but the cows from this co-op are grain-fed as a portion of their diet. This milk is from small Amish farms in WI that are certified organic and hand milk thier own cows.

We had so many requests for more options for organic nuts, trail mixes and granola.

The fact that these are all made in a peanut-free facility peaked a lot of interest as well.

There's just a couple weeks left until the end of 2020. We need to get a rough idea of how many seeds to be ordering for our 2020 vegetables. If you pre-register for the TC Farm 2021 Weekly Produce share, you'll be able to get free weekly delivery. With produce, dairy and food right to your door, this is a really exciting thing for us to be offering. If you've been on the fence about joining, be sure to let us know by the end of the year so we can be sure to reserve a spot for you!

Neighborhood Pickup Sites -- New Locations and More 

We've added several new neighborhood pickup sites including Stillwater, a second pickup site in Albertville (to help lighten the load of a site that was getting a little big) and a new pickup site in St. Anthony.

You can easily change to any of these (or any other) neighborhood pickup site. Set your default pickup location in the member portal under Your Account / Pickup Location. If you make the change there, it will change for all future deliveries, not just the one in January.


The page also has a handy map to help you pick the site that's best for you.

New Pickup Site in St. Anthony - Columbia Heights!

Starting in January, we have a new neighborhood pickup site in the St. Anthony, Columbia Heights area. Pickups will be on the second Thursday of the month. If you live in the area and would like to begin to pick up there, you can easily change your pickup location. Be sure to make the change before midnight December 31st if you want to pick up there in January.




A message as we close out 2020

What a whirlwind year!

A big THANK YOU to our members for the support and especially to the TC Farm staff, processors and farmers who worked WAY too much this year to provide food to our community. We were able to do so much more this year than we ever would have dreamed at the start of the year. Some of our newer members might not even know how much of this happened just this year!

  • We just started doing home delivery this March (We'd been trying to figure it out for years but then in March when people couldn't get meat at the store and we had meat, we wanted to get food to people's homes as quickly as we could - somehow we figured it out on the fly and we just kept running!)
  • We had to move all of our Minneapolis/St. Paul neighborhood pickups to home deliveries at the last minute in June. (Didn't think we'd be able to pull that one off until after we did it!)
  • A huge influx of new members because of all the people suddenly cooking from home
  • Moving to a new warehouse (!!) allowed us to to bundle items better and offer more variety and choices (behind the scenes for our members but a massive change)
  • We started to deliver fish. And fruit and nuts. And soups. And cheese. And pet treats. And mushroom butter. And monthly sampler packs and a whole host of other stuff too!

As challenging as this year has been, I am excited for the opportunities we have in 2021. The produce farmers are excited to finally be a part of our group. I just can’t wait to share all of the plans we have for next year: The start of weekly home delivery and the ability to share all the types of amazing food I love will be a dream come true! Most of these items aren’t available in any grocery and the ones that are, we’re able to offer at a lower price.

Your support has built something special! It’s been ten years since our hobby farm became the beginning of this group. If you watched my presentation on why I left corporate life to start it, you’ll know how long of a road it has been for all of us at TC Farm and have a good idea of where we’re headed.

Looking at what 2020 drove us as a collective group to build, I am sure 2021 is going to be a fantastic year!
