July's mixed selection of mushrooms in the mushroom sampler will be Pink Oyster and Chestnut.
Plus, as always, we have individual smaller packs of mushrooms, too. For July, our smaller packs will be King Trumpet and Lion's Mane.

Maitake is wonderfully adaptable with a fabulous, forest aroma, a deep umami flavor and a light, crunchy, somewhat meaty texture.
Traditional in Asian cuisine, but its rich versatile flavor also finds complements with roasted meats and chicken, cheeses, dark leafy greens, and hearty grains.

Chestnut

Chestnut mushrooms, have an earthy and nutty taste. The chestnut is tasty and meaty, whether raw or cooked. These mushrooms do not have a distinctive odor, which could prove beneficial in certain dishes.
Chestnut mushrooms have a meaty texture and are reminiscent of a more flavorful and darker button mushroom. As such, they’re an extremely versatile mushroom and can be used in a number of dishes: salads, pastas, sauces, quiches, casseroles, and soups will all benefit from the addition of a few Chestnut mushrooms. They will remain firm when cooked in any dish. When sautéed, Chestnut caps crisp up nicely.
Pink Oyster

Pink Oysters taste like bacon or ham and their flavor intensifies when cooked. The aroma is pungent, which is very characteristic of the oyster mushroom. Their meat-like flavor and succulent texture makes Pink Oyster mushrooms a wonderful meat substitute in many dishes without overpowering the other ingredients.
Because they taste so much like bacon or ham, they can be used as a vegetarian or vegan substitute. Try some Pink Oyster mushrooms with your eggs in the morning for a “bacon and eggs” flavor or add some crisped Pink Oyster mushrooms to a vegetarian carbonara.
