We usually run out of steaks in the spring - I know that's shocking, right? Everyone wants the best tasting steaks to celebrate the return of summer, and of course we get a run on steaks.
But for March, we have most steak packages discounted by about $10 or so. Now is the time to stock up and be ready for grilling season!
Why are TC Farm steaks so much better?
One of the books that drove Jack and Betsy to start TC Farm was a story about an author who somehow convinced his publisher to send him around the world trying to taste-test the very best steaks. It's a fantastic book (here is a link to an article we wrote about the author)
Anyhow, the key reason our steaks taste better is age. Our steers enjoy a fantastic life, often twice as long as the grocery or even farmer's market beef. This emphasis that we take on slow growth and high quality care not only sets our steaks apart from an environmental perspective, but also from a flavor perspective. Typical weights are between 0.8 and 0.95 pounds per package with two steaks in each package.
Tenderloin steaks are known as one of the most tender and premium cuts, but they actually have the least flavor of any steak. That's why when they come off of a corn fed steer, they aren't all that good, tender, but minimal flavor.
OUR beef is slower growth and develops better and more flavor. This makes the tenderloin from our beef SO much better than grocery or internet beef. Go ahead and treat yourself!

The breast is from our cornish cross birds, the breed of chicken you'd find in the grocery or farmers' market. We take special care to ensure they have a natural, slow growth so they can live a longer good life

Treat yourself
- Dry aged tenderloin steak (1-2 steaks, ~.75lbs total)
- 2 organic seasoned salmon burgers (0.5 lbs total)
- Boneless chicken breast
- Rosemary brats (sugar free and amazing)
- Our fantastic breakfast sausage patties
- Custom made organic brioche hamburger buns (4)
Cook the salmon burgers from frozen. The package says to cook to 165º. You can get the same safety by cooking to 140º-145º and maintaining that temperature for 5 minutes. Sear with olive oil in a hot pan or over a grill and serve with toasted buns and aioli.
The rosemary brats and breakfast sausages are some of our favorite sausages for eating by themselves or cooking into a dish or hash!
The tenderloin steaks are best cooked to 125ºF and resting 5 minutes up to 128ºF or so.
