Sunrise Flour Mill's Heritage Rigatoni Pasta and Fusilli Pasta is made in small batches from two simple ingredients: their highest quality heritage wheat flour, and water.
Using bronze dyes is kind of a big deal! It takes much longer and the pasta takes a whole day to cure. However, it adds micro texture to the pasta that keeps the sauce from slipping off. Regular grocery pasta is extruded and smooth so you have just a slippery noodle. The pasta is then slowly air-dried at low temperatures to retain as much flavor and nutritional value as possible.
