Two Types: Let us Know Which is your First Preference

There will be two types of ramps that we offer: organic locally grown ramps and wild ramps. The key thing to know about ramps is that the season on ramps is highly variable (like with morels). This means that depending on the weather, we may not be able to fill everyone's order.

If we don't have enough of one kind of ramp that is fresh the week of your delivery, we will substitute the other one (and the associated price).

When you add ramps to your next delivery, regardless of the kind, you are reserving ramps and telling us your preference for which type you prefer. We will do our best to fill that type, but by ordering, you are agreeing to getting ramps.

To give you a sense of the volume in each package - the picture included is about a quarter pound. We will be including a half pound (about twice as much) in our portion size.

Members who want to make a few dishes with them may want to order multiple orders and can store them in the veggie crisper with a damp cloth/paper towel for longer term storage.

Maitake is wonderfully adaptable with a fabulous, forest aroma, a deep umami flavor and a light, crunchy, somewhat meaty texture

Traditional in Asian cuisine, but its rich versatile flavor also finds complements with roasted meats and chicken, cheeses, dark leafy greens, and hearty grains. 

A good source of micronutrients!

Up your cooking game with ramps!

Ramps are like scallions with the sweetness of a leek and the strong pungency you’d find in garlic. They can be eaten raw or cooked without any danger as long as you rinse them well. You can add them to a salad or add the leaves to a sandwich. Sauté the bulbs separate or with the leaves. Add to eggs. On top of meat. In stir fry.

The leaves are better if you slice them a bit before cooking them. They are fairly resilient, not quite as tender as spinach. Pesto is another great way to use the leaves.
