New Stuff for September Deliveries
We've got a lot of good stuff you might want to check out for this upcoming delivery.

Apples
We will be mixing three varieties of early apple into the bags: Pristine, William's Pride and State Fair.
If you asked to get apples, we've already added them to your next delivery.
Otherwise, you can still add them but quantities are limited and we definitely expect to run out.
Log-in and add to your cart today. If any apples remain available on August 28th, we will open up the ordering to make them available to the waitlist members.
Soups
TC Farm is excited to offer new soups along with our monthly deliveries. We've included one soup in our September pop-up sampler and made a special soup sampler package as well!
Ryan and Mike (founders of the Simpls restaurants) have refined these recipes over the years. Most ingredients are organic and often local. The soups offered for this month are vegetarian and several are vegan - so you can enjoy them as-is or consider crisping up some cutup ham or other sausages to mix-in.
We designed our September Sampler to include some ham and garlic cheese bread to pair nicely with the split pea and kale soup!
We're working with Ryan and Mike to offer some soups using other TC Farm products, so look for those soon!
September Sampler
Our sampler last month was a big hit so we're doing it again. The September sampler pack includes:
- 2 packs salmon fillets (minimum of 8 ounces each)
- 1 pack of grass fed ground beef (1 lb)
- 1 pack of brats (this month most will be Italian until we run out but some will include another variety - no way to be sure until you see which you get!)
- 1 pack of sliced rustic ham
- 1 pack of our 48 hour smoked pulled pork
- 1 whole chicken
- 1 pack organic garlic cheese sourdough bread from Backwards Bread
- 1 quart of mostly organic/local split pea and kale (vegan) soup from Simpls
- 1 pack of ground pork (1lb each)
- 2 bone-in thick cut pork chops (~1.1lb each)
Pro tip: The sliced ham can be chopped and crisped up in a buttered pan and added to the soup. Trust us. It's pretty great.
Brioche Brat Buns
The folks at Backwards Bread have started offering Brioche Brat Buns that you can add to your deliveries. If you've ordered brats from us recently (or are planning to in September) you should give these a try. (Technically, these aren't "new" -- we started offering them last month but we only gave them a mention in passing so we figured we'd shine a spotlight on them this time!
Forest Hog
We only offer our special, slow-growth Forest Hog packages once a year. Why? Well, for starters, we hand-feed them every day to prevent excessive fat and to encourage flavorful slow growth. It takes over twice as long to raise a Forest Hog, which will provide half as much food as our regular heritage mixed pork! If you've ever wanted to try some for yourself (or you've been waiting for us to offer them again for deliveries) now is the time!
New Addresses for 3 Pickup Sites
We have three of our pickup sites with new addresses, just down the road from where they used to be:
- Mahtomedi (The location is now called Lake Elmo)
- South St. Paul
- Minneapolis - Powderhorn
If you pick up at one of these three locations, make sure to note the updated address on the main page of your member portal (or the reminder emails we send out on pickup day if you choose to get reminder emails instead of reminder text messages). We've also updated our map on the Pickup Location page so you can see the nearest main intersection.
Mushrooms expected for September:
Chanterelles will also work excellent as a side to pierogis or sautéed and used in omelets or scrambled eggs with good cheese. Eggs, cheese and potatoes are great parings that bring out the fruity quality of the Chanterelle.
We had originally hoped for Lobster but we probably won't be able to do lobsters for our second mushroom. They are not coming up at a good rate for a large scale harvest. So we expect to do do shiitake for the second mushroom. Since there weren't quite enough shiitake some will be getting the delicious Oysters. So it goes with foraged mushrooms.
